Its name derives from the pig's casing in which the minced meat is stuffed. Levoni is one of the few to use Italian casings for this salame, with a particular pear shape, common in Emilia. It is the natural hog bung casing that characterises the aroma and flavour of the paste keeping it soft even in the face of a long maturation.

Cut into 3-4 mm slices with a knife, strictly slantwise, thus obtaining an elongated, oval slice. Serve slices on a cutting board with the knife.
It is a classic paired with culatello, coppa and prosciutto di Parma. With Parmigiano Reggiano cheese, with fresh summer fruit such as melon or figs that accentuate its sweetness, with the mixed pickled vegetables and homemade bread. Excellent also with courgette carpaccio, lemon juice, extra virgin olive oil and almonds.
